The seared stem (the technique that makes this mushroom)
Slice the stems into 1-inch rounds — these are thick and meaty, and that’s intentional. Heat butter or a high-smoke-point oil in a pan over medium-high heat until it shimmers. Place the stem rounds flat in the pan, press down lightly, and leave them alone for 4 to 5 minutes. You want a deep golden-brown crust. Flip once, cook another 3 to 4 minutes. Season in the last 30 seconds. The caps can be torn and added to the pan in the final 2 minutes — they cook faster.
Pro tip: These are excellent for plant-based “scallops.” Sear in butter with a little garlic, finish with a squeeze of lemon. Serve as a starter or alongside pasta.

Care and Handling
When your box arrives: Put the mushrooms in the refrigerator right away. Black Pearl Kings are denser than oyster varieties and hold up well — they’ll stay fresh for 7 to 10 days. Cook them within the first 7 days for the best texture.
Breathable Storage is Best: Keep mushrooms in their original packaging, a paper bag, or a container with a slightly open lid. This allows air circulation and prevents moisture buildup. Avoid airtight plastic bags.
How to Clean: Wipe the caps and stems with a dry paper towel. They rarely need rinsing. If needed, a very quick rinse is fine — pat dry immediately.
Always Cook Thoroughly: Cook mushrooms to an internal temperature of 165°F (74°C). Cooking not only makes them safe but also unlocks their best flavor and texture.
