Mushroom and Beef Burgers

Ingredients: Roasted Mushroom Mix

  • 2 teaspoons extra-virgin olive oil

  • 1/2 pound Oyster mushrooms, sliced or quartered

  • ½ pound lean ground beef

  • 1 tablespoon minced chives

  • 1 shallot minced

  • 1 teaspoon fresh lemon juice (more or less to taste)

  • Salt to taste

  • Freshly ground black pepper to taste

Preparation: Roasted Mushroom Mix

### Step 1 Preheat your oven to 400 degrees. Line two baking sheets with parchment paper.

### Step 2 In a large bowl, combine the mushrooms with olive oil, salt, and black pepper. Spread the mixture evenly across the baking sheets. Bake in the middle and lower racks of the oven for 20 minutes. Stir every 5 minutes and swap pans from top to bottom halfway through. When finished, the mushrooms should be tender and dry. Remove from heat and let cool.

### Step 3 Using a grinder or food processor, pulse the mushroom mixture until it resembles small, ground meat pieces. I find that pulsing about 10 times, scraping down the sides, and then pulsing another five to 10 times works best. Taste and adjust the seasoning as necessary, adding a bit more salt or pepper if desired.

### Step 4 In a large bowl, mix the mushroom blend with the ground beef until well combined. Shape the mixture into four patties. You can learn more about patties [here](http://patties.in). ### Step 5 Heat a heavy skillet over medium-high heat. Add just enough olive oil to coat the pan. Cook the patties for 5-6 minutes on each side. Once done, remove from the pan and serve. You can use a bun or enjoy them plain. Baby arugula, mizuna, or spicy microgreens make excellent accompaniments.
