Golden Oyster Mushroom Soup With Orzo & a Pat of Butter

  • 3 Tbsp. olive oil, plus more
  • 12 oz. oyster mushrooms, torn or cut into bite-size pieces
  • Kosher salt
  • Freshly ground black pepper
  • 6 garlic cloves, thinly sliced
  • ½ tsp. ground turmeric
  • ¼ tsp. crushed red pepper flakes
  • 6 cups water or broth
  • ¾ cup dried orzo
  • 2 tsp. fish sauce or soy sauce
  • 2 Tbsp. unsalted butter
  • Flaky sea salt
  1. Brown oyster mushrooms in batches in olive oil with salt and pepper. Add garlic and cook until deeply browned.

  2. Stir in turmeric and red pepper flakes to bloom. Add broth, orzo, and fish sauce.

  3. Simmer 15-20 minutes until orzo is cooked and broth is flavorful.

  4. Finish with butter, additional fish sauce, flaky salt, and pepper.
