Every customer who has tasted our umami seasonings at the farmers market says the same thing without being prompted: that’s delicious. That is not an accident. We engineered the umami response deliberately using the natural glutamate compounds concentrated in our farm-grown oyster mushrooms. The seasoning is made from the same mushrooms we sell fresh — dehydrated and blended on the farm, nothing else added.

Why they are not available online yet

Our seasonings are currently available at farmers markets across Northern Virginia, Richmond, and Fredericksburg. We are in the process of completing the commercial food production permitting that will allow us to sell and ship them nationwide. When that permit clears, these will be available in our online store for delivery and shipping across the US.

We are also watching a bill currently on the Governor’s desk that would expand Virginia’s cottage food law to allow online sales of products like ours. If that passes, availability may come sooner.

When online sales open — whether through the permit approval or the new legislation — you will be the first to know. We will not send you anything until then. No newsletters, no marketing, just a single message when the moment arrives.

Why whole mushroom powder is different

Most mushroom-based seasonings and supplements use extract — a process that isolates selected compounds and loses everything else. Our seasonings are made from 30 to 40 percent whole oyster mushroom powder. The full compound matrix of the mushroom is intact: the free glutamic acid and 5′-nucleotides that create the synergistic umami response, the complete amino acid profile, the beta-glucans, the ergothioneine. Nothing removed. Nothing diluted.

This is why customers who have used other mushroom seasonings notice the difference immediately.
