BBQ Oyster Mushroom Pizza

A sweet and savory pizza topped with barbecue sauce, smoked Gouda, and crispy oyster mushrooms.

  • 6 oz. mixed oyster mushrooms, cut or torn into large pieces (about 3½ cups)

  • 2 Tbsp. extra-virgin olive oil, plus more for drizzling

  • 1 lb. store-bought pizza dough, room temperature

  • ⅓ cup (or more) barbecue sauce

  • 6 oz. fresh mozzarella, torn (about 1 cup)

  • 2 oz. smoked Gouda, coarsely grated (about ½ cup)

  • ½ small red onion, thinly sliced

  • Kosher salt, freshly ground pepper

  • Crushed red pepper flakes and cilantro leaves (for serving)

  1. Place a rack in upper third of oven and preheat to 475°. Drizzle oyster mushrooms with olive oil in a large bowl; toss to coat. Set aside.

  2. Swirl olive oil in a 12" cast-iron skillet. Place dough in pan; stretch and press to fill.

  3. Bake until crust starts to set, about 5 minutes. Spread barbecue sauce over crust. Top with cheeses, onion, and reserved oyster mushrooms. Season with salt and pepper.

  4. Bake until crust is golden and cheese is melted, 16–20 minutes.

  5. Broil pizza until oyster mushrooms are browned and crispy, about 2 minutes.

  6. Drizzle more barbecue sauce if desired and top with red pepper flakes and cilantro.
