Creamy Oyster Mushroom Pasta
A quick and decadent pasta dish tossed with crispy oyster mushrooms, bright lemon, and a rich Parmesan-cream sauce.

1 lb. spaghetti or bucatini
Kosher salt
4 Tbsp. extra-virgin olive oil
1 lb. mixed oyster mushrooms, torn into bite-size pieces
2 medium shallots, finely chopped
½ cup heavy cream
Zest and juice of ½ lemon
½ oz. Parmesan, finely grated, plus more for serving
⅓ cup finely chopped parsley
2 Tbsp. unsalted butter, cut into pieces
Freshly ground black pepper
Cook pasta in boiling salted water until very al dente.
Brown oyster mushrooms in batches in olive oil, then return all to pot. Add shallots and cook until soft.
Transfer pasta to pot with oyster mushrooms, ½ cup cream, and 1 cup pasta water. Simmer until thickened.
Off heat, toss in lemon zest and juice, Parmesan, parsley, and butter. Season generously and serve.
