Oyster Mushroom and Black Bean Burritos

A simple, hearty Tex-Mex classic packed with sautéed oyster mushrooms, black beans, tomatillo salsa, and crumbled goat cheese.

  • 2 tablespoons olive oil
  • 2 medium onions, sliced
  • 2 red bell peppers, sliced
  • 3 garlic cloves, minced
  • 10 ounces crimini oyster mushrooms, sliced
  • 10 ounces button oyster mushrooms, sliced
  • 1 tablespoon chili powder
  • 1 15-ounce can black beans, drained
  • 3/4 cup tomatillo salsa
  • 6 flour tortillas
  • 6 tablespoons crumbled goat cheese
  • Cilantro
  1. Sauté onions, peppers, and garlic in oil. Add all oyster mushrooms and brown. Stir in chili powder.

  2. Add black beans and salsa, cooking until juices evaporate. Stir in cilantro, salt, and pepper.

  3. Warm tortillas, fill with oyster mushroom mixture, top with goat cheese, and roll up.
