Oyster Mushroom and Shallot Salisbury Steak

  • ¾ cup panko breadcrumbs
  • 1 Tbsp. plus 2 tsp. Worcestershire sauce
  • 5 medium shallots
  • 1 large egg
  • 1 lb. ground beef
  • 9 garlic cloves, grated
  • 3 tsp. mustard powder
  • Kosher salt and pepper
  • 2 Tbsp. olive oil
  • 4 Tbsp. unsalted butter
  • 1 lb. crimini oyster mushrooms, sliced
  • 3 Tbsp. all-purpose flour
  • 3 cups chicken broth
  • Juice of 1 lemon
  • 5 sprigs thyme
  • ¼ cup parsley
  1. Mix panko, Worcestershire, chopped shallots, egg, beef, grated garlic, mustard powder, salt, and pepper. Form 4 patties. Sear in oil, then remove.

  2. Sauté sliced shallots and oyster mushrooms in butter until browned. Stir in remaining garlic and flour.

  3. Gradually whisk in broth, lemon juice, thyme, mustard powder, and pepper. Simmer to reduce.

  4. Return patties to gravy, simmer 5 mins, and garnish with parsley.
