Oyster Mushrooms with Soy Butter

Foil-packet grilled or baked oyster mushrooms infused with an incredibly savory, deeply flavorful scallion and soy sauce compound butter.

  • 8 scallions, trimmed

  • 10 Tbsp. unsalted butter, room temp

  • 3 Tbsp. low-sodium soy sauce

  • Kosher salt and black pepper

  • 2 lbs. assorted fresh oyster mushrooms, sliced

  • ¼ cup extra-virgin olive oil

  1. Process butter and soy sauce until smooth, then stir in 1 Tbsp chopped scallion to make compound butter.

  2. Toss oyster mushrooms with sliced scallions, olive oil, salt, and pepper.

  3. Divide mixture onto foil or parchment sheets, dot with soy butter, and seal packets.

  4. Bake or grill at 425° for 15 minutes. Open and dot with remaining butter.
