Pancit Canton

A vibrant, savory Filipino noodle stir-fry packed with fresh vegetables, chewy wheat noodles, and earthy oyster mushrooms.

  • 2 tsp. oyster mushroom powder or vegetable broth

  • 2 Tbsp. vegetable oil

  • 1 medium onion, sliced

  • 5 garlic cloves, chopped

  • 3 celery stalks, sliced

  • 2 carrots, matchsticks

  • ½ small green cabbage, sliced

  • 1/ cup oyster mushrooms

  • 1 cup snow peas

  • 1 Tbsp. liquid seasoning

  • 1 Tbsp. oyster sauce

  • 1 Tbsp. soy sauce

  • 1 lb. fresh wheat noodles

  • Fish sauce

  • Scallions and lemon wedges

  1. Dissolve oyster mushroom powder in water.

  2. Stir-fry onion and garlic, then add celery, carrots, cabbage, oyster mushrooms, and snow peas until crisp-tender.

  3. Add liquid seasoning, oyster sauce, soy sauce, and broth. Simmer, add noodles, and cook until liquid is absorbed. Season with fish sauce.

  4. Garnish with scallions and serve with lemon wedges.
