Saucy Oyster Mushroom Stir-Fry
A lightning-fast, flavor-packed stir-fry tossed in a spicy, sweet soy-vinegar glaze that’s perfect over a steaming bowl of rice.

2 Tbsp. soy sauce
2 Tbsp. seasoned rice vinegar
1 Tbsp. chili crisp
1 Tbsp. Japanese barbecue sauce
1 Tbsp. mirin
1 Tbsp. cornstarch
2 Tbsp. vegetable oil
1 small onion, sliced
1 lb. mixed fresh oyster mushrooms, torn
2 Tbsp. unsalted butter
¼ tsp. toasted sesame oil
Toasted sesame seeds
Mix soy sauce, vinegar, chili crisp, BBQ sauce, and mirin. In another bowl, mix cornstarch and water.
Sauté onion in oil until soft, then remove. Sauté oyster mushrooms in oil until crispy.
Return onion to pan, stir in sauce, and add cornstarch slurry. Simmer until thick. Finish with butter.
Drizzle with sesame oil and garnish with sesame seeds before serving.
