Seared Oyster Mushrooms With Garlic and Thyme

Perfectly golden, steak-like seared oyster mushrooms bathed in a rich, nutty, and aromatic garlic-thyme brown butter.

  • 2 tablespoons olive oil

  • 12 ounces oyster mushrooms, cut into large pieces

  • Kosher salt, freshly ground pepper

  • 4 tablespoons unsalted butter

  • 2 sprigs thyme

  • 2 garlic cloves, crushed

  1. Sear oyster mushrooms in hot oil undisturbed until golden brown, then toss and brown all over.

  2. Reduce heat, add butter, thyme, and garlic. Tip skillet and baste oyster mushrooms with foaming butter until nutty.

  3. Remove with a slotted spoon and serve.
