Spicy Oyster Mushroom and Lemongrass Stir-Fry
A vibrant, fragrant, and fiery Vietnamese-style stir-fry featuring tender oyster mushrooms, crunchy snow peas, and aromatic lemongrass.

2 Tbsp. plus 1½ tsp. peanut oil
½ small onion, wedged
3 Tbsp. chopped lemongrass
1 large Fresno chile, chopped
1 Tbsp. chopped garlic
1½ tsp. Madras curry powder
¼ tsp. sugar
Kosher salt
10 oz. oyster mushrooms, torn
4 oz. sugar snap or snow peas
1 Tbsp. fish sauce
Sauté onion and lemongrass in oil until soft. Add chile, garlic, curry powder, sugar, and salt; stir until fragrant.
Add oyster mushrooms and stir-fry over high heat until firm-tender.
Toss in snow peas until bright, then finish with fish sauce. Serve immediately.
