Spring Hot-and-Sour Soup
A quick, bright, and rejuvenating vegetarian soup with earthy miso, spring peas, and tender shiitake oyster mushrooms.

1 Tbsp. olive oil
3 garlic cloves, sliced
1" piece ginger, chopped
2 Tbsp. miso
1 Tbsp. soy sauce
2 tsp. rice vinegar
½ tsp. toasted sesame oil
½ tsp. Aleppo-style pepper
2 oz. oyster mushrooms, sliced
1 cup mixed peas
1 large egg or silken tofu
Kosher salt
Sauté garlic and ginger in oil. Add water, dissolved miso, soy sauce, vinegar, sesame oil, and pepper. Simmer 10 minutes.
Add oyster mushrooms and peas, cooking until crisp-tender.
Gently stir in egg to create ribbons, or add tofu to warm through. Season and serve.
