Swiss Chard and Oyster Mushroom Galette
A beautifully rustic whole wheat tart packed with savory Swiss chard, caramelized oyster mushrooms, and creamy ricotta.

1 cup all-purpose flour
1 cup whole wheat flour
1 tsp. kosher salt
¾ cup chilled unsalted butter
1 Tbsp. apple cider vinegar
1 cup ricotta
3 Tbsp. olive oil
4 oz. oyster mushrooms
1 garlic clove, chopped
1 bunch Swiss chard, chopped
1 large egg
1 cup fresh tender herbs
1 tsp. lemon zest
1 tsp. lemon juice
Flaky sea salt
Process flours, salt, and butter. Add vinegar and ice water to form a dough; chill for 2 hours.
Brown oyster mushrooms in oil. Sauté garlic and chard until wilted. Season ricotta.
Roll dough, spread ricotta, and top with veggies. Fold edges, brush with egg, and bake at 400° for 35-40 mins.
Toss herbs with lemon juice and oil. Top baked galette with herbs, zest, and flaky salt.
