Yogurt-Marinated Oyster Mushrooms With Flatbread

Smoky, spice-rubbed grilled oyster mushrooms tucked into homemade flatbreads with quick-pickled onions and a bright lime-yogurt sauce.

  • 1½ cups plain whole-milk Greek yogurt, divided

  • 4 Tbsp. fresh lime juice, divided

  • 3 tsp. honey

  • 1 tsp. cumin seeds

  • 1 small red onion, sliced

  • 4 garlic cloves

  • 1 2" piece ginger, grated

  • 1 Tbsp. ground coriander

  • 1 Tbsp. ground cumin

  • 1 tsp. ground turmeric

  • ½ tsp. cayenne pepper

  • 1 lb. oyster mushrooms

  • ½ cup whole wheat flour

  • 1¾ cups all-purpose flour

  • Cilantro

  • Kosher salt

  1. Blend ½ cup yogurt, 2 Tbsp lime juice, honey, cumin seeds, salt, and 2 garlic cloves for sauce. Quick-pickle onions in lime juice and salt.

  2. Mix remaining garlic, ginger, lime juice, spices, 1 cup yogurt, oil, and salt into a paste. Coat oyster mushrooms and chill 30 mins.

  3. Knead flours, ½ cup yogurt, salt, and water into a dough. Divide, roll into flatbreads, and grill until charred.

  4. Grill marinated oyster mushrooms until cooked through. Serve on flatbread with sauce and pickled onions.
